The best chewy chocolate chip cookies ever

I’ve made these cookies more times than I can count, and wanted to finally give them a place on my blog!

This recipe was passed down to us from Ben’s mom, and dates back to the very beginning of our relationship.

It was the spring of 2008, and Pat and I were sitting on the outdoor bleachers at a rainy conference track meet to watch Ben pole vault. It actually might have been the first time I’d ever met the woman who would become my future mother in law. She brought a ziplock bag full of these cookies and I remember sitting in the car eating them to escape the rain. Maybe subconsciously that was the moment I realized I wanted to marry this guy, if only to get access to these life changing cookies.

(In another funny twist of fate, seven years later Ben and I would end up living in an apartment very close to that track in Chicago! And Thomas would be born in the hospital next door to the park. Small world.)

The Best Chewy Chocolate Chip Cookies Ever

Ingredients

  • 2 ¼ cups unsifted flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup unsalted butter (2 sticks), room temp

  • ¼ cup sugar

  • ¾ cup packed brown sugar

  • 1 4oz box of vanilla instant pudding 

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 bag chocolate chips

Directions

Preheat oven to 375*.

Mix flour with baking soda and salt.

In a large bowl or stand mixer, combine butter, sugar, brown sugar, pudding mix, and vanilla. Beat until smooth and creamy, then beat in eggs. 

Gradually add flour mixture to wet ingredients.

Stir in chocolate chips.

Drop by spoonfuls onto greased baking sheet.

Bake for 8-10 minutes.

Cookies should be very lightly browning on top, and will solidify when cooled.

Cool for a few minutes on the baking sheet, then remove to a cooling rack.

Double Chocolate Version

Use chocolate instant pudding mix instead of vanilla. 

Holiday Version

Stir in a jar of festive sprinkles with the chocolate chips. I love doing this for an extra crunch!
